Tikka Kabab
A Recipe By Food Fusion.
Ingredients:
-Chicken drumsticks 9-10
-Dahi (Yogurt) ¾ Cup
-Cream 3-4 tbs
-Anday ki zardi (Egg yolk) 1
-Adrak lehsan paste (Ginger garlic paste) ½ tbs
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Zeera powder (Cumin powder) 1 tbs
-Kaju (Cashew nut) powder 2 tbs
-Dhania powder (Coriander powder) 1 tbs
-Kala zeera (Caraway seeds) powder ¼ tsp
-Zafran (Saffron strands) ½ tsp
-Himalayan pink salt ½ tbs or to taste
-Lal mirch (Red chilli) crushed 1 tsp
-Garam masala powder ½ tsp
-Cooking oil 2-3 tbs
-Koyla (Charcoal) for smoke
Directions:
-Make a deep cut in the center of chicken drumstick vertically & open it like a butterfly & set aside.
-In a bowl,add yogurt,cream,egg yolk,ginger garlic paste,red chilli powder,cumin powder,cashew nut powder,coriander powder,caraway seeds powder,saffron strands,pink salt,red chilli crushed,garam masala powder & whisk well.
-Add chicken drumsticks,mix & coat well,cover & marinate for 4 hours.
-In a frying pan,add cooking oil & cook marinated chicken on medium flame from all sides until brown (3-4 minutes),cover & cook on low flame until done (10-12 minutes).
-Give coal smoke for 2 minutes & serve!
